Salads, salads, and New York Restaurant and Bar

And now, back to your regularly scheduled programming! I moved from Iowa City to Baltimore and are all settled, so I thought I pop and tell you some things I ate and drank lately. This first picture is of a beautiful salad of Cass that my friend gave me a stop in Pittsburgh Wednesday night. It was great to have some nice fresh vegetables for supper after eating energy bars all day on the disk. Here we have lettuce, tomatoes, dried cranberries, roasted red peppers, and ranch. Yum!

I arrived in Baltimore on Thursday, but then disappeared for a weekend in New York. After one day of energy bars, I had a great dinner at Pizzeria Giovanni in Midtown Manhattan with Rita, my Aunt Judith (shown here with me), and his partner David. I went to John for a couple of years ago, and although the pizza was not exactly what I remembered, was still very good. Rita and I shared a spinach salad and a pizza bruschetta. I love the lack of tomato sauce and the ingredients were definitely high quality.

After the departure of Judith and David, Rita and I went to the nearest Pinkberry frozen yogurt. Apparently the yogurt is a major problem in New York this summer. At least ten chains, some only a few national and local levels. I was going to Pinkberry in Los Angeles, but was too full, so it was nice to try. This photo is Rita and I went to Pinkberry, and below you can see our heads (we were eager to get a picture of the yogurt can be observed!) I had coconut yogurt with cherries and strawberries, which was good, but perhaps not so fantastic, like all bloggers had led me to believe.

Peanut Butter Fudge Jar

Although not participating in the activity for which 4 / 20 is famous, I feel I should be a recipe for those of you who post. I also believe that I note that if you are not worried about the toxins found in plastics, this recipe is not for you. For me it is worth the risk the salvation of one dessert plate that can be easily done from what I have here in the apartment.

This was something of an experiment, so I understood steps. Basically you want a jar of peanut butter, which is about one third full and take a couple of tablespoons of icing sugar for download in the pot. Use a microwave cup of half a stick of butter, add peanut butter and stir until mixture is smooth. Shaking, microwave a cup almost full of chocolate chips and then stir in the melted chocolate Originally I did a little ‘too much butter and the chocolate too much, but I think this is about the same. Baked Mushrooms

These mushrooms have an interesting meaty texture and gutsy flavour. Topped with Taleggio cheese and fresh herbs, it’s a match made in heaven. Go on, tuck in!

Preheat the oven to 200°C/400°F/gas 6.

Lay the mushrooms on a large baking tray and sprinkle with the onions, garlic and thyme.

Top the mushrooms with the slices of Taleggio. Toss together the breadcrumbs and the parsley and sprinkle over the mushrooms.

Bake for 15 to 20 minutes in the preheated oven until breadcrumbs are brown and the mushrooms are cooked through.

Meanwhile, dress the rocket with the lemon juice and some olive oil. Serve the mushrooms with the dressed rocket.

ingredients

• 8 large flat mushrooms
• a bunch of spring onions, trimmed and sliced
• 1 clove of garlic, peeled and finely chopped
• a few sprigs of fresh thyme, leaves picked
• 250g Taleggio cheese, thinly sliced
• 2 thick slices of bread, made into breadcrumbs
• a small bunch of fresh flat-leaf parsley, chopped
• 4 handfuls of rocket, washed and dried
• juice of 1 lemon
• extra virgin olive oil


Apple And Walnut Risotto With Gorgonzola

This is like a Waldorf salad! The combo of strong cheese with apples and walnuts just works. If you can get hold of quality gorgonzola, please do – the sweetness of the apples really offsets it. I’ve used marjoram here, but thyme works just as well. 

First make your basic risotto recipe, then put a large saucepan on a medium to high heat and pour in half the stock, followed by all your risotto base. Stirring all the time, gently bring to the boil, then turn the heat down and simmer until almost all the stock has been absorbed. Add the rest of the stock a ladleful at a time until the rice is cooked. You might not need all your stock. Be careful not to overcook the rice – check it throughout cooking to make sure it’s a pleasure to eat. It should hold its shape but be soft, creamy and oozy. And the overall texture should be slightly looser than you think you want it.

Turn off the heat, beat in your butter, Parmesan, gorgonzola, goat’s cheese, chopped apple and marjoram. Check the seasoning and add salt and pepper if needed. Put a lid on the pan and leave the risotto to rest for a minute so the cheese can really ooze into it. While you’re waiting, gently heat the walnuts in a pan. Then either take the risotto to the table and let everyone help themselves, or divide it between individual serving plates. Put a block of Parmesan on the table for grating over. Sprinkle with the walnuts and drizzle with a little extra virgin olive oil before tucking in.
